Description

Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup unsalted butter, melted
  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 tbsp red gel food coloring
  • 3 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup dark chocolate sauce

Instructions

  1. Preheat your oven to 160°C (325°F) and grease a 9-inch springform pan.
  2. Mix the chocolate cookie crumbs and melted butter until it resembles wet sand, then press into the bottom of the pan.
  3. In a stand mixer, beat the cream cheese until smooth, then add sugar, cocoa, and food coloring, mixing until combined.
  4. Add eggs one at a time and mix until smooth. Stir in vanilla extract.
  5. Pour the filling over the crust, smoothing the top with a spatula.
  6. Bake for 50–55 minutes until edges are set and center jiggles slightly.
  7. Turn off the oven and leave cheesecake inside for 30 minutes to prevent cracking.
  8. Allow to cool at room temperature then refrigerate for at least 4 hours or overnight.
  9. Drizzle with dark chocolate sauce before serving.
