Description

Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg

  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, beat the softened butter and brown sugar together with a hand mixer until light and fluffy.
  4. Add the molasses, egg, and vanilla extract to the butter-sugar mixture, beating until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes or until the edges are firm but the centers are slightly soft.
  8. Allow the cookies to cool on the tray for a few minutes before transferring to a wire rack.
  9. Prepare the filling by beating together powdered sugar, cocoa powder, butter, vanilla extract, and milk until smooth.
  10. Once cooled, spread filling on the flat side of one cookie and top with another cookie.
