- 2 large zucchinis
- 1 cup ricotta cheese
- 1 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Olive oil
- 1 cup marinara sauce
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
- Prepare the cheese mixture by combining ricotta, 1/2 cup mozzarella, Parmesan, egg, salt, and pepper in a mixing bowl and whisking until smooth and creamy.
- Layer a thin layer of marinara sauce on the bottom of your baking dish.
- Roll a zucchini strip by placing a spoonful of the cheese mixture at one end and rolling it up.
- Arrange each rolled zucchini in the baking dish seam-side down.
- Fill the dish with all zucchini strips placed snugly.
- Add the remaining marinara sauce over the zucchini rolls and sprinkle with remaining mozzarella.
- Drizzle olive oil over the top and cover with aluminum foil.
- Bake for 25 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden brown.
- Garnish with fresh basil before serving.
Notes
Ensure zucchini strips are thin enough to roll but not too flimsy. Use well-drained ricotta for a firmer filling.
