Description

A comforting Italian classic featuring tender zucchini filled with creamy ricotta and topped with marinara sauce and melted mozzarella.


Ingredients

Scale
  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • Olive oil
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
  3. Prepare the cheese mixture by combining ricotta, 1/2 cup mozzarella, Parmesan, egg, salt, and pepper in a mixing bowl and whisking until smooth and creamy.
  4. Layer a thin layer of marinara sauce on the bottom of your baking dish.
  5. Roll a zucchini strip by placing a spoonful of the cheese mixture at one end and rolling it up.
  6. Arrange each rolled zucchini in the baking dish seam-side down.
  7. Fill the dish with all zucchini strips placed snugly.
  8. Add the remaining marinara sauce over the zucchini rolls and sprinkle with remaining mozzarella.
  9. Drizzle olive oil over the top and cover with aluminum foil.
  10. Bake for 25 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden brown.
  11. Garnish with fresh basil before serving.

Notes

Ensure zucchini strips are thin enough to roll but not too flimsy. Use well-drained ricotta for a firmer filling.
