A healthy twist on traditional pizza, these Zucchini Pizza Boats are a delightful and nutritious alternative, filled with marinara, cheese, and your favorite toppings.

- 4 zucchinis
- 1 tsp. oregano
- Salt and pepper to taste
- 1/2 cup marinara sauce
- 1 cup part-skim shredded mozzarella cheese
- 1/2 cup turkey pepperoni, chopped or vegetarian pepperoni
Instructions
- Preheat your oven to 400 degrees F (204 degrees C).
- Cut each zucchini in half lengthwise and scoop out the insides.
- Sprinkle with oregano, salt, and pepper.
- Place the zucchini halves cut-side up on a baking sheet and bake for 10 minutes.
- Spread about 1 tablespoon of marinara sauce on each half and top with cheese and pepperoni.
- Bake again for 15-20 minutes or until the cheese is bubbly.
Notes
Let the marinara sauce come to room temperature for easy spreading. Consider mixing a dollop of ricotta into the sauce for a creamier topping.
