Description

Ingredients

  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 2/3 cup orange juice
  • 2 cups shredded unpeeled zucchini
  • 3 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp grated orange zest
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup chopped nuts (optional)
  • 1 cup powdered sugar
  • 23 tbsp orange juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two loaf pans
  2. Beat eggs until thick and pale, then gradually mix in sugar
  3. Stir in vegetable oil, orange juice, and shredded zucchini
  4. Whisk together flour, baking powder, baking soda, salt, orange zest, cinnamon, and cloves
  5. Gradually add dry ingredients to wet mixture, stirring until just combined
  6. Fold in nuts if using
  7. Divide batter between prepared pans and bake 45-55 minutes
  8. Cool in pans 10-15 minutes, then transfer to wire rack
  9. Whisk powdered sugar and orange juice for glaze and drizzle over cooled bread
