Description

Delightful zucchini and edamame fritters that are crispy on the outside and moist on the inside, perfect for snacks or meals.


Ingredients

  • 1 cup frozen edamame, defrosted
  • 2 eggs
  • 1 medium zucchini, finely grated
  • 1/2 cup ricotta cheese
  • 1/4 cup wholemeal self-raising flour
  • 2 tablespoons fresh herbs of choice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Edamame Mixture: Add the defrosted edamame and both eggs to a high-speed blender or small food processor. Blend until mostly smooth.
  2. Grate the Zucchini: Wrap the grated zucchini in a clean towel and squeeze out excess moisture.
  3. Combine Ingredients: In a mixing bowl, combine the zucchini, edamame mixture, ricotta, flour, herbs, garlic powder, and salt. Mix well.
  4. Heat the Skillet: Preheat a non-stick skillet over medium heat and add a splash of oil.
  5. Cook the Fritters: Scoop tablespoon-sized portions into the skillet and cook until golden brown, about 1 to 2 minutes per side.
  6. Serve Warm: Best enjoyed warm, with a yogurt dip or sauce of choice.
