Ingredients

- 1 cup frozen edamame, defrosted
- 2 eggs
- 1 medium zucchini, finely grated
- 1/2 cup ricotta cheese
- 1/4 cup wholemeal self-raising flour
- 2 tablespoons fresh herbs of choice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- Prepare the Edamame Mixture: Add the defrosted edamame and both eggs to a high-speed blender or small food processor. Blend until mostly smooth.
- Grate the Zucchini: Wrap the grated zucchini in a clean towel and squeeze out excess moisture.
- Combine Ingredients: In a mixing bowl, combine the zucchini, edamame mixture, ricotta, flour, herbs, garlic powder, and salt. Mix well.
- Heat the Skillet: Preheat a non-stick skillet over medium heat and add a splash of oil.
- Cook the Fritters: Scoop tablespoon-sized portions into the skillet and cook until golden brown, about 1 to 2 minutes per side.
- Serve Warm: Best enjoyed warm, with a yogurt dip or sauce of choice.
