Description

A nutritious and delicious twist on traditional oatmeal, packed with the flavors of zucchini bread, perfect for busy mornings or leisurely brunches.

Ingredients

Scale
  • 1 ripe banana, mashed
  • 2 tsp almond butter
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 cup shredded zucchini (squeezed of excess moisture)
  • 1/2 cup rolled oats
  • 2 tsp chia seeds

Instructions

  1. Mash the banana in a medium bowl until smooth.
  2. Incorporate the almond butter, almond milk, vanilla extract, and cinnamon; stir until creamy.
  3. Mix in the rolled oats, shredded zucchini, and chia seeds until well-coated.
  4. Refrigerate for at least 4 hours or overnight for best flavor.
  5. Enjoy straight from the fridge, or warm in the microwave with more almond milk if needed.

Notes

For added sweetness, drizzle honey or maple syrup before serving. Always squeeze excess moisture from the zucchini.
