  • 1 large egg
  • Olive oil or butter, to cook

Instructions

  1. Prepare the Zucchini: Grate the zucchini and wrap it tightly in a clean kitchen towel. Squeeze out as much moisture as you can.
  2. Mix Ingredients: In a large bowl, combine the strained zucchini, mashed banana, ricotta, egg, flour, and cinnamon. Stir until fully incorporated.
  3. Prep the Pan: Heat a non-stick skillet over medium heat and lightly spray with olive oil or melted butter.
  4. Cook Bites: Spoon tablespoon-sized portions of the mixture into the skillet, cooking for 1-2 minutes until golden, then flip and cook for another minute.
  5. Serve Warm: Enjoy them warm, plain or with honey ricotta or yogurt for dipping.

Notes

For a dairy-free version, swap out ricotta for almond or coconut yogurt. Ensure the zucchini is well dried to avoid overly wet bites.
