- 1/2 tsp ground cinnamon
- 1/3 cup full-fat ricotta
- 1 large egg

- Prepare the Zucchini: Grate the zucchini and wrap it tightly in a clean kitchen towel. Squeeze out as much moisture as you can.
- Mix Ingredients: In a large bowl, combine the strained zucchini, mashed banana, ricotta, egg, flour, and cinnamon. Stir until fully incorporated.
- Prep the Pan: Heat a non-stick skillet over medium heat and lightly spray with olive oil or melted butter.
- Cook Bites: Spoon tablespoon-sized portions of the mixture into the skillet, cooking for 1-2 minutes until golden, then flip and cook for another minute.
- Serve Warm: Enjoy them warm, plain or with honey ricotta or yogurt for dipping.
