Description
A vibrant Thai dressing and dipping sauce that combines garlic, fish sauce, and lime juice for an explosion of flavors, perfect for seafood and salads.
Ingredients

- 4 cloves garlic, peeled and roughly chopped
- 8 Thai chilis, or to taste
- 1 1/2 tablespoons fish sauce
- 1 1/2 tablespoons granulated sugar
- 3 1/2 tablespoons fresh lime juice
Instructions
- Prepare the garlic: In a mortar and pestle, add the chopped garlic and pound it until it forms a smooth paste, about 2-3 minutes.
- Add the chilis: Toss in the Thai chilis and continue to pound until well integrated, around another 2 minutes.
- Mix it up: Pour in the fish sauce, sugar, and lime juice into the mortar. Use a spoon to stir and mix until the sugar has fully dissolved.
- Taste test: Adjust lime juice or sugar to your liking. If it’s too salty, add a pinch of sugar.
- Serve: Drizzle over seafood dishes or salads, and store any leftovers in an airtight container in the fridge for up to a week.
Notes
This sauce can also be used as a marinade. Store in an airtight container in the refrigerator. Its flavors will deepen after a day!
