- 4 Boneless, skinless chicken breasts
- 3 tbsp Extra virgin olive oil
- 3 cloves Fresh garlic, minced
- 2 tbsp Fresh lemon juice
- 1 tsp Kosher salt
- 1/2 tsp Freshly cracked black pepper
- 1 Cucumber, diced or sliced
- 2 Ripe tomatoes, diced
- 1 Red onion, thinly sliced
- 1/2 cup Crumbled feta cheese
- 2 cups Cooked quinoa or rice
- 1/4 cup Fresh parsley, chopped
- 1 cup Greek yogurt
- 1/2 Cucumber, grated for tzatziki
- 1 tbsp Fresh dill
Instructions
- Marinate the chicken: In a bowl, combine extra virgin olive oil, minced garlic, fresh lemon juice, kosher salt, and freshly cracked black pepper. Add the boneless, skinless chicken breasts and marinate for at least 30 minutes.
- Cook the chicken: Preheat the grill or a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
- Prepare quinoa or rice: While the chicken cooks, prepare cooked quinoa or rice according to package instructions.
- Slice the cooked chicken: Once done, allow the chicken to rest for 5 minutes before slicing it against the grain.
- Assemble bowls: In serving bowls, place a scoop of quinoa or rice, topped with sliced chicken, diced cucumber, diced tomatoes, thinly sliced red onion, and crumbled feta cheese.
- Make tzatziki: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and fresh dill. Season with salt to taste.
- Serve and enjoy: Drizzle tzatziki over assembled bowls and garnish with chopped parsley.
Notes
Let the chicken marinate at room temperature for best flavor. For a smoother tzatziki, strain grated cucumber to remove excess moisture.
