Description

A vibrant, heart-warming dish that combines marinated chicken, fresh veggies, and tangy tzatziki, served over quinoa or rice.


Ingredients

  • 4 Boneless, skinless chicken breasts
  • 3 tbsp Extra virgin olive oil
  • 3 cloves Fresh garlic, minced
  • 2 tbsp Fresh lemon juice
  • 1 tsp Kosher salt
  • 1/2 tsp Freshly cracked black pepper
  • 1 Cucumber, diced or sliced
  • 2 Ripe tomatoes, diced
  • 1 Red onion, thinly sliced
  • 1/2 cup Crumbled feta cheese
  • 2 cups Cooked quinoa or rice
  • 1/4 cup Fresh parsley, chopped
  • 1 cup Greek yogurt
  • 1/2 Cucumber, grated for tzatziki
  • 1 tbsp Fresh dill

Instructions

  1. Marinate the chicken: In a bowl, combine extra virgin olive oil, minced garlic, fresh lemon juice, kosher salt, and freshly cracked black pepper. Add the boneless, skinless chicken breasts and marinate for at least 30 minutes.
  2. Cook the chicken: Preheat the grill or a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
  3. Prepare quinoa or rice: While the chicken cooks, prepare cooked quinoa or rice according to package instructions.
  4. Slice the cooked chicken: Once done, allow the chicken to rest for 5 minutes before slicing it against the grain.
  5. Assemble bowls: In serving bowls, place a scoop of quinoa or rice, topped with sliced chicken, diced cucumber, diced tomatoes, thinly sliced red onion, and crumbled feta cheese.
  6. Make tzatziki: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and fresh dill. Season with salt to taste.
  7. Serve and enjoy: Drizzle tzatziki over assembled bowls and garnish with chopped parsley.

Notes

Let the chicken marinate at room temperature for best flavor. For a smoother tzatziki, strain grated cucumber to remove excess moisture.
