Ingredients
  

  • 1 cup (225g) unsalted butter, softened
  • ½ cup fresh wild garlic leaves, finely chopped
  • 1 tsp lemon zest
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 tsp lemon juice (optional)

Instructions
 

  • Rinse wild garlic leaves thoroughly and pat dry
    Finely chop leaves (can pulse in food processor)
    In a bowl, mix softened butter with wild garlic, lemon zest, salt, and pepper
    Optional: Add lemon juice for brightness
    Spoon onto parchment paper and roll into a log
    Chill for at least 2 hours to let flavors meld
    Slice as needed
