Ingredients
  

For the crispy rice

  • 3 cups cooked jasmine or sushi rice, cooled Opt for short grain sushi rice for the ultimate texture.
  • 2 tbsp sesame oil For frying the rice.
  • 2 tbsp olive oil For frying the rice.

For the dressing

  • ½ cup whole-egg mayonnaise Substitute with vegan mayo for dairy-free.
  • 3 tbsp tamari or all-purpose soy sauce Adjust according to taste.
  • 2 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 1 tbsp honey Use organic for a vegan option.
  • 1 tbsp sriracha Optional, for heat.

For the salad

  • 425 g canned tuna in oil, drained Choose sustainably sourced tuna.
  • 2 Lebanese cucumbers, sliced into half-moons
  • 1 cup frozen edamame beans, thawed
  • 1 avocado, diced Freshness is key.
  • 2 spring onions finely sliced
  • 1 tsp black sesame seeds
  • Chili crisp or chili oil (optional)
  • 1 fresh jalapeño, sliced (optional)

Instructions
 

Crispy Rice

  • If you’re using fresh rice, start by cooking 3 cups (555 g) of jasmine or sushi rice according to package instructions. Let it cool completely for at least 30 minutes.
  • Heat 2 tbsp of sesame oil and 2 tbsp of olive oil in a pan over medium heat. Once hot, spread the cooled rice evenly and press down to form a compact layer.
  • Allow it to cook for 5-7 minutes, until golden and crispy on the bottom. Flip carefully and repeat on the other side.

Dressing

  • In a bowl, whisk together ½ cup mayonnaise, 3 tbsp soy sauce, 2 tbsp rice wine vinegar, 2 tbsp sesame oil, 1 tbsp honey, and sriracha (if using). Taste and adjust seasoning. Set aside.

Assemble the Salad

  • In a large mixing bowl, combine drained tuna, sliced cucumbers, edamame, diced avocado, and spring onions. Gently fold in the dressing until everything is well coated.
  • Serve the crispy rice topped with the salad mixture. Sprinkle with black sesame seeds and add chili crisp or jalapeño slices (if desired) for the finishing touch.

Notes

Store components separately for best freshness. Assemble salad right before serving to maintain crispiness. Use high-quality ingredients for the best results.
