Ingredients
  

For the main mixture

  • 1 lb lean ground beef (96/4) Low-fat option that keeps the dish hearty.
  • 1 packet taco seasoning For that unmistakable taco flavor.
  • 8 oz Banza Chickpea Pasta Elbows (uncooked) A protein-packed alternative to traditional pasta.
  • 1 cup red bell pepper, chopped Adds color and crunch.
  • 8 oz low fat cottage cheese Helps add richness without excess calories.
  • 1/2 cup medium spice salsa Adds flavor and moisture.
  • 1/4 cup whole milk Can substitute with 2%.
  • 1/2 cup mild cheddar cheese Classic cheese that melts beautifully.
  • 1/2 cup reduced fat sharp cheddar cheese Adds depth of flavor.
  • 1 tbsp all-purpose flour Helps thicken the sauce.
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tbsp chili powder
  • 1.5 tbsp ground cumin
  • 1/4 cup water

Instructions
 

Cooking

  • Bring a large pot of water to a boil and cook the elbow macaroni according to the package directions, approximately 7-8 minutes for al dente texture.
  • While the noodles cook, heat a large skillet over medium heat. Add lean ground beef, breaking it into small pieces, and cook until browned all over, about 5-7 minutes.
  • In a small bowl, mix taco seasonings with 1/4 cup of water to create a paste. Once the meat is cooked, add this seasoning mixture and reduce heat to low. Simmer for another 5 minutes.
  • Add chopped red bell peppers to the skillet and cook for an additional 5 minutes until softened.
  • Blend cottage cheese until smooth. Combine with salsa, milk, and flour until mixed well.
  • Pour cottage cheese sauce into the skillet, add mild and sharp cheddar cheese, and stir until melted and creamy.
  • Drain the cooked pasta and mix it into the skillet until thoroughly coated with the cheese sauce.
  • Serve hot, topped with chopped cilantro if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Can prepare sauce and meat mixture a day in advance.
