Ingredients
  

  • 2 cups fresh strawberries, hulled and diced
  • 1/4 cup granulated sugar (adjust as desired)
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Crushed graham crackers or cookies (for the base)

Instructions
 

  • 1.Make Compote: Combine strawberries, sugar, and lemon juice in saucepan. Simmer 10 minutes until thickened. Cool completely.
    2.Whip Cream: Beat heavy cream to stiff peaks. Set aside.
    3.Make Base: Beat cream cheese, powdered sugar, lemon zest/juice, and vanilla until smooth.
    4.Fold: Gently fold whipped cream into lemon mixture.
    5.Layer: Divide strawberry compote among 6 cups. Top with lemon mousse.
    6.Chill: Refrigerate 4+ hours.
    7.Garnish: Add whipped cream, strawberry halves, and mint before serving.

Notes

  • Use room temperature cream cheese for smoothest texture
  • Can be made 1 day ahead (add toppings last)
  • For vegan version, use coconut cream and dairy-free cream cheese
