Ingredients
  

  • 3 cups strawberries, sliced (plus some for garnish)
  • 1/2 cup granulated sugar
  • 1 medium lemon, juiced and zested
  • 2 tablespoons cornstarch
  • 16 ounces cream cheese, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 1/2 cups graham cracker crumbles (about 12 crackers)
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt

Instructions
 

  • Prep Crust:
    Mix crumbs, melted butter, and sugar
    Press into 9x9" lined pan
    Bake at 325°F (160°C) for 10 minutes
    Make Filling:
    Beat cream cheese and sugar until smooth
    Add eggs one at a time, then vanilla
    Pour over cooled crust
    Create Swirl:
    Blend strawberries, sugar, and lemon juice
    Drop spoonfuls on cheesecake layer
    Swirl with knife
    Bake:
    35 minutes until set but slightly jiggly
    Cool completely, then chill 4+ hours

Notes

  • For no-bake version: Use gelatin-stabilized filling
  • Frozen strawberries work (thaw and drain first)
  • Store refrigerated up to 5 days
