Ingredients
  

  • 1 lb (450g) ground beef (80% lean)
  • 8 oz (225g) penne or rigatoni pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • ½ cup sun-dried tomatoes (oil-packed), sliced
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup chicken or beef broth
  • Salt & black pepper to taste
  • Red pepper flakes (optional)

Instructions
 

  • Cook Pasta: Boil pasta in salted water until al dente. Drain, reserving ½ cup pasta water.
    Brown Beef: Heat olive oil in a skillet. Cook ground beef until browned (5–7 mins). Drain excess fat.
    Sauté Aromatics: Add onion, garlic, and sun-dried tomatoes; cook until fragrant (2 mins).
    Simmer Sauce: Pour in broth and cream. Add Italian seasoning, salt, and pepper. Simmer 5 mins.
    Combine: Stir in cooked pasta, spinach, and Parmesan. Toss until spinach wilts and sauce thickens (3 mins). Add pasta water if needed.
    Serve: Garnish with extra Parmesan and red pepper flakes.

Notes

  • Substitutions: Use ground turkey or mushrooms for a lighter version. Swap heavy cream with coconut milk for dairy-free.
  • Storage: Refrigerate for 3 days or freeze for 1 month. Reheat with a splash of broth to restore creaminess.
