Spicy Chicken and Cheese Enchiladas

Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) enchilada sauce
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • 6-8 small tortillas
  • ½ cup diced onions (optional)
  • ¼ cup chopped cilantro (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C).
    In a bowl, mix shredded chicken, half the cheese, chili powder, cumin, and garlic powder.
    Spread a thin layer of enchilada sauce on the bottom of a baking dish.
    Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
    Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
    Bake for 20-25 minutes, or until the cheese is melted and bubbly.
    Garnish with diced onions and cilantro (optional) before serving.

Notes

  • For extra spice, add diced jalapeños to the chicken mixture.
  • Use corn tortillas for a gluten-free option.
  • Leftovers can be stored in the fridge for up to 3 days.
