- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can (10 oz) enchilada sauce
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- 6-8 small tortillas
- ½ cup diced onions (optional)
- ¼ cup chopped cilantro (optional)
Preheat the oven to 375°F (190°C).In a bowl, mix shredded chicken, half the cheese, chili powder, cumin, and garlic powder.Spread a thin layer of enchilada sauce on the bottom of a baking dish.Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.Bake for 20-25 minutes, or until the cheese is melted and bubbly.Garnish with diced onions and cilantro (optional) before serving.
