Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • ½ cup breadcrumbs
  • 1 egg
  • 3 garlic cloves (minced)
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper (to taste)
  • 1 tbsp olive oil
  • ½ cup chicken or beef broth
  • 1 cup heavy cream
  • 4 oz blue cheese (crumbled)
  • Fresh parsley (for garnish)

Instructions

  • Prepare the Meatball Mixture: In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, minced garlic, smoked paprika, cumin, salt, and pepper. Mix gently until just combined.
Shape the Meatballs: Use a tablespoon or small scoop to portion the mixture, then roll into evenly sized meatballs.
Brown the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs in batches and cook until browned on all sides. Remove and set aside.
Make the Blue Cheese Sauce: In the same skillet, add broth to deglaze the pan. Stir in heavy cream and crumbled blue cheese, letting it melt into a smooth sauce.
Simmer and Serve: Return the meatballs to the skillet and simmer in the sauce for 5-7 minutes, until cooked through. Garnish with fresh parsley and serve warm.

Notes

  • For a milder flavor, use Gorgonzola or feta instead of blue cheese.
  • Serve with crusty bread or roasted vegetables for a complete meal.
