- 3 medium potatoes, diced into small cubes
- 1 green bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp dried thyme
- Salt and black pepper to taste
