Ingredients
  

  • 1 lb smoked kielbasa, sliced into ½-inch pieces
  • 3 medium potatoes, diced into small cubes
  • 1 green bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and black pepper to taste

  • 1 red bell pepper, diced

Instructions
 

  • Step 1: Prepare the Ingredients
    Slice the smoked kielbasa, dice the potatoes and vegetables, and mince the garlic.
  • Step 2: Cook the Potatoes
    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes, season with salt, pepper, and smoked paprika, and cook for 10 minutes, stirring occasionally, until golden and tender. Remove from the skillet and set aside.
  • Step 3: Sauté the Vegetables
    Add another tablespoon of olive oil to the skillet. Toss in the onion, bell peppers, and garlic. Sauté for 5 minutes until the vegetables soften.
  • Step 4: Cook the Kielbasa
    Push the vegetables to one side of the skillet. Add the sliced kielbasa to the other side and cook for 3-4 minutes until browned and slightly crispy.
  • Step 5: Combine and Serve
    Return the cooked potatoes to the skillet. Mix everything together, sprinkle with dried thyme, and cook for an additional 3 minutes to let the flavors meld. Garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

  • For an even smokier flavor, use andouille sausage instead of kielbasa.
  • Add a splash of chicken broth during the final step for a saucier texture.
