Ingredients
  

  • 8 oz pasta (rotini, penne, or shells)
  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • Salt and pepper to taste

Instructions
 

  • Cook Pasta: Boil pasta according to package directions. Drain and rinse with cold water.
    Prep Dressing: Whisk together mayonnaise, sour cream, lemon juice, garlic powder, dill, salt, and pepper.
    Combine: In a large bowl, mix cooled pasta, shrimp, tomatoes, cucumber, red onion, and olives.
    Dress: Pour dressing over salad and toss gently to coat.
    Chill: Refrigerate for at least 30 minutes before serving. Garnish with fresh parsley.

Notes

  • For best flavor, chill for 2+ hours before serving.
  • Substitute Greek yogurt for sour cream for a lighter version.
