- 1 lb cooked shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp dried dill
- Salt and pepper to taste
Cook Pasta: Boil pasta according to package directions. Drain and rinse with cold water.Prep Dressing: Whisk together mayonnaise, sour cream, lemon juice, garlic powder, dill, salt, and pepper.Combine: In a large bowl, mix cooled pasta, shrimp, tomatoes, cucumber, red onion, and olives.Dress: Pour dressing over salad and toss gently to coat.Chill: Refrigerate for at least 30 minutes before serving.
