Ingredients
  

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp olive oil, divided
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime, juiced
  • 2 tbsp fresh cilantro, chopped
  • 8 small flour or corn tortillas, warmed

Optional Toppings:

  • Sour cream
  • Avocado slices
  • Salsa
  • Shredded cheese

Instructions
 

  • Marinate Shrimp: Toss shrimp with 1 tbsp olive oil, chili powder, cumin, smoked paprika, salt, and black pepper. Set aside.
    Sauté Veggies: Heat remaining oil in a large skillet over medium-high. Add bell peppers and onion; cook 5–6 minutes until softened. Add garlic; cook 30 seconds.
    Cook Shrimp: Push veggies to one side. Add shrimp in a single layer; cook 2–3 minutes per side until pink.
    Finish: Squeeze lime juice over the skillet and toss everything together. Garnish with cilantro.
    Serve: With warm tortillas and optional toppings.

Notes

  • For spicier fajitas, add ½ tsp cayenne pepper or diced jalapeños.
  • Swap shrimp for chicken or steak if preferred.
  • Prep veggies ahead to save time.
