Ingredients
  

  • 1 lb (450g) large shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 shallot, diced
  • 1 (14 oz) can diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 tsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped
  • ½ cup chicken broth
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper to taste

Instructions
 

  • Heat oil in skillet over medium-high. Sauté garlic and shallot (1 min).
    Add shrimp, cook 2 mins per side until pink. Remove and set aside.
    In same pan, add tomatoes, paste, spices, Worcestershire, and broth. Simmer 5 mins.
    Return shrimp to pan, toss to coat. Cook 2 more mins.
    Garnish with parsley. Serve with crusty bread.

Notes

  • Spice Level: Reduce cayenne for milder version
  • Substitutions: Use vegetable broth for pescatarian version
  • Serving Suggestion: Over rice or with lemon wedges
