  • 4 pieces Fresh peaches Opt for organic or locally sourced peaches if possible.
  • 8 oz Burrata cheese Look for fresh burrata.
  • 2-3 tablespoons Olive oil Use a high-quality extra virgin olive oil.
  • to taste Salt and pepper Freshly cracked black pepper adds a lovely kick.
  • Balsamic glaze Can be store-bought or homemade.
  • Fresh basil leaves For garnish. Can substitute with mint.

Preparation

  • Preheat your grill or grill pan over medium heat (around 350°F - 400°F).
  • Carefully cut the peaches in half and remove the pit.
  • Using a pastry brush, liberally coat the cut side of each peach half with olive oil.

Grilling

  • Place the peaches cut side down on the grill and cook for approximately 4-5 minutes.
  • Remove the peaches from the grill once they show grill marks and are tender, allowing them to cool slightly.

Assembly

  • Scoop a generous portion of burrata onto each grilled peach half.
  • Drizzle with balsamic glaze and season with salt and pepper to taste. Garnish with fresh basil leaves.

Notes

Avoid grilling overly ripe peaches to prevent them from falling apart. Store leftovers separately for up to 2 days.
