Preparation

  • In a separate bowl, whisk the milk, vegetable oil, and eggs until smooth.
  • Combine the wet mixture with the dry ingredients, stirring gently until just mixed.
  • Spoon batter into the muffin tin, filling each cup about two-thirds full.

Baking

  • Bake for 18-20 minutes or until tops spring back when pressed and a toothpick comes out clean.
  • Cool in the tin for 5 minutes, then transfer to a wire rack.
