Ingredients
  

  • 1.5 lbs (700g) baby potatoes, halved
  • 200 g feta cheese block
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Preheat the oven to 400°F (200°C).
    In a large bowl, toss the halved potatoes with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper until evenly coated.
    Transfer the potatoes to a baking dish and place the feta block in the center.
    Bake for 40-45 minutes, or until the potatoes are golden and crispy, and the feta is soft and slightly browned.
    Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

  • For extra flavor, add a sprinkle of chili flakes or lemon zest before serving.
  • This dish pairs well with grilled meats or a fresh salad.
