Ingredients
  

For the Red Velvet Layer:

  • 1 cup red velvet cake mix (or homemade batter)
  • 1 large egg (if using mix)
  • ¼ cup vegetable oil (if using mix)
  • ½ cup water (if using mix)

For the Cheesecake Layer:

  • 8 oz (225g) cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup whipped cream or sour cream

Optional Toppings:

  • White chocolate drizzle
  • Crushed red velvet crumbs
  • Powdered sugar

Instructions
 

  • Prepare Red Velvet Base:
    If using cake mix, combine with egg, oil, and water. Bake in a thin layer (e.g., 8x8" pan) at 350°F (175°C) for 15–20 minutes. Cool completely, then crumble.
    Press crumbs into mini muffin tin liners as the base.
    Make Cheesecake Filling:
    Beat cream cheese, sugar, and vanilla until smooth. Fold in whipped cream.
    Pipe or spoon filling over red velvet bases.
    Chill & Serve:
    Refrigerate for at least 2 hours. Drizzle with melted white chocolate or dust with powdered sugar before serving.

Notes

  • For no-bake version, use store-bought red velvet cookies as the base.
  • Chill thoroughly to set the cheesecake layer.
