Ingredients
  

  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 tomatoes, chopped
  • 2 tbsp olive oil
  • 1 tsp dried tehym
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions
 

  • Prepare the Vegetables: Heat olive oil in a large pan over medium heat. Add the onion and garlic, sautéing until fragrant.
    Cook the Eggplant: Add the diced eggplant to the pan and cook for 5-7 minutes, stirring occasionally.
    Add Zucchini and Peppers: Stir in the zucchini and bell peppers. Cook for another 5 minutes until slightly softened.
    Incorporate Tomatoes and Herbs: Add the chopped tomatoes, thyme, oregano, salt, and pepper. Reduce heat to low, cover, and simmer for 30 minutes.
    Final Touches: Stir occasionally and adjust seasoning if needed. Garnish with fresh basil leaves before serving.

Notes

Serve with crusty bread or over rice for a complete meal.
