Instructions
Prepare the Vegetables
: Heat olive oil in a large pan over medium heat. Add the onion and garlic, sautéing until fragrant.
Cook the Eggplant
: Add the diced eggplant to the pan and cook for 5-7 minutes, stirring occasionally.
Add Zucchini and Peppers
: Stir in the zucchini and bell peppers. Cook for another 5 minutes until slightly softened.
Incorporate Tomatoes and Herbs
: Add the chopped tomatoes, thyme, oregano, salt, and pepper. Reduce heat to low, cover, and simmer for 30 minutes.
Final Touches
: Stir occasionally and adjust seasoning if needed. Garnish with fresh basil leaves before serving.
