  • 1/4 cup heavy cream Use fresh cream for optimal texture.

Preparation

  • In a microwave-safe bowl, combine the chopped white chocolate and heavy cream. Heat in the microwave for 30 seconds, then stir. Continue to heat in 30-second intervals, stirring each time until the mixture is melted and smooth. This should take about 1-2 minutes.
  • Stir in the crushed freeze-dried raspberries and rosewater until fully incorporated.
  • Refrigerate the mixture for about 1 hour, or until firm enough to scoop.
  • Once firm, scoop out small portions with a teaspoon or melon baller and roll them into balls.
  • Roll the truffles in the extra crushed raspberries to coat evenly.
  • Place the finished truffles on a baking sheet lined with parchment paper and refrigerate until ready to serve.

Notes

These truffles can be stored in an airtight container in the fridge for up to a week or in the freezer for up to three months. Feel free to customize the flavor with other fruits or extracts.
