Ingredients
  

  • 1 head of radicchio, chopped
  • 1 can of beans (cannellini or kidney), drained and rinsed
  • 100g feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Optional: Nuts or seeds for crunch

Instructions
 

  • 1.Prep Vegetables: Soak onion in cold water for 5 mins to mellow flavor. Drain.
    2.Make Dressing: Whisk oil, lemon juice, honey, mustard, and garlic.
    3.Combine: Toss radicchio, beans, onion, and half the dressing.
    4.Finish: Top with feta, walnuts, and parsley. Drizzle remaining dressing.

Notes

  • Massage radicchio with ½ tsp salt to reduce bitterness
  • Substitute chickpeas for cannellini beans
  • Vegan option: Omit feta or use tofu-based alternative
