Ingredients
  

  • 8 slices thick-cut bread (brioche or challah preferred)
  • 3 large eggs
  • ½ cup milk (whole or 2%)
  • ½ cup pumpkin puree
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt
  • 2 tbsp butter (for cooking)

Optional Toppings:

  • Maple syrup
  • Whipped cream
  • Toasted pecans
  • Powdered sugar

Instructions
 

  • Whisk eggs, milk, pumpkin puree, brown sugar, vanilla, pumpkin pie spice, and salt in shallow bowl.
    Soak bread slices 20-30 seconds per side in mixture.
    Melt butter in skillet over medium heat. Cook soaked bread 3-4 minutes per side until golden.
    Serve warm with desired toppings.
