Ingredients
  

Wet Ingredients

  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 tsp vanilla extract

Dry Ingredients

  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger

Optional Add-Ins

  • ½ cup chopped nuts (walnuts or pecans)
  • ½ cup chocolate chips

Instructions
 

  • Step 1: Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • Step 2: Mix Wet Ingredients
    In a large mixing bowl, whisk together the pumpkin puree, eggs, oil, sugars, and vanilla extract until smooth.
  • Step 3: Combine Dry Ingredients
    In a separate bowl, sift together the flour, baking soda, baking powder, salt, and spices.
  • Step 4: Combine Wet and Dry Mixtures
    Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the bread tender.
  • Step 5: Add Optional Ingredients
    Fold in nuts or chocolate chips, if desired.
  • Step 6: Bake
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 7: Cool
    Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • For a richer flavor, let the bread sit overnight before slicing.
  • Double the recipe to make two loaves—one for now and one to freeze for later!
