  • 1 package (12 oz) pork or chicken dumplings Freshly made dumplings from local markets or brands like Wei-Chuan or Trader Joe’s.
  • 4 cups low-sodium chicken broth Homemade is best, but quality store-bought broth will work too.
  • 1 tbsp fresh ginger, grated Fresh ginger gives an aromatic kick; substitute with ground ginger if needed.
  • 3 cloves garlic, minced Always opt for fresh garlic for the savory base.
  • 2 cups fresh spinach or bok choy Choose tender greens, or use kale or Swiss chard as alternatives.
  • 2 tbsp soy sauce Use low-sodium soy sauce for a healthier option.
  • 1 tsp sesame oil Adds a nutty depth; use in moderation.
  • 2 green onions, chopped for garnish Adds a bright, refreshing crunch.

Preparation

  • Gather all your ingredients to streamline the cooking process.
  • In a large pot over medium heat, add a splash of oil and sauté minced garlic and grated ginger until fragrant (about 1 minute).
  • Pour in the chicken broth and bring it to a gentle boil.
  • Add the dumplings and cook until they are tender, about 6-8 minutes.
  • Stir in the fresh spinach or bok choy along with the soy sauce and cook until the greens are wilted, about 2-3 minutes.
  • Drizzle sesame oil before serving.
  • Ladle the soup into bowls and garnish with chopped green onions.

Notes

Store leftovers in the fridge for up to 3 days, or freeze for up to 2 months. You can prepare dumplings a day in advance and keep them in the refrigerator.
