Portuguese Chicken Recipe

Ingredients
  

  • 1 whole chicken, cut into pieces
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • ¼ cup olive oil
  • 2 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 cup chicken broth
  • ½ cup white wine
  • 2 bay leaves
  • 1 lemon, juiced
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
    In a large bowl, mix garlic, onion, olive oil, paprika, cumin, chili powder, salt, and pepper.
    Rub the mixture all over the chicken pieces.
    Place the chicken in a baking dish and pour chicken broth and white wine around it.
    Add bay leaves and lemon juice.
    Bake for 40 minutes, basting occasionally with the juices, until chicken is cooked through.
    Garnish with fresh parsley and serve hot.

Notes

For extra flavor, marinate the chicken overnight.
