For Noodles:
- 3 medium zucchini, spiralized (~4 cups noodles)
- 1 tbsp olive oil
- ¼ tsp salt
For Shrimp:
- ½ lb (225g) large shrimp, peeled & deveined
- 2 garlic cloves, minced
- 1 tbsp olive oil
- ¼ tsp red pepper flakes
For Pesto:
- ½ cup fresh basil leaves
- 2 tbsp pine nuts
- 1 garlic clove
- 3 tbsp grated Parmesan
- 3 tbsp olive oil
- 1 tbsp lemon juice
Make Pesto: Blend all pesto ingredients until smooth.Cook Shrimp: Sauté garlic in oil 30 sec, add shrimp and pepper flakes. Cook 2-3 mins per side. Set aside.Prepare Zoodles: In same pan, heat oil. Add zucchini noodles and salt. Sauté 2 mins until just tender.Combine: Toss zoodles with pesto. Top with shrimp.
