Ingredients
  

For the Salad

  • 2 medium cucumbers, finely diced (Persian cucumbers preferred)
  • 3 medium tomatoes, finely diced
  • 1 small red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, chopped

For the Dressing

  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Optional: sumac for an earthy tang

Instructions
 

  • Step 1: Prepare the Vegetables
    Wash all vegetables thoroughly.
    Dice cucumbers, tomatoes, and onion into small, uniform pieces for a consistent texture.
  • Step 2: Make the Dressing
    In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Add sumac if using.
  • Step 3: Toss and Combine
    In a large mixing bowl, combine the diced vegetables and herbs.
    Pour the dressing over the vegetables and gently toss until everything is evenly coated.
  • Step 4: Serve and Enjoy
    Transfer to a serving dish and garnish with extra parsley or mint if desired.
