  • 1 lb (450g) carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • ¼ cup grated Parmesan
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped parsley (garnish)
  • Optional: ½ tsp paprika

Instructions
 

  • Preheat oven to 400°F (200°C).
    Toss carrots with oil, garlic, salt, and pepper.
    Roast 20 minutes, stirring halfway.
    Sprinkle with Parmesan, roast 5 more minutes.
    Garnish with parsley before serving.
