For the Candied Walnuts:
- ½ cup walnuts
- ¼ cup sugar
- ¼ cup water
For the Shrimp:
- 1 lb (450g) large shrimp, peeled and deveined
- ½ cup cornstarch
- ¼ cup all-purpose flour
- ½ tsp salt
- ¼ tsp black pepper
- 1 egg, beaten
- Oil for frying
For the Sauce:
- ¼ cup mayonnaise
- 2 tbsp honey
- 1 tbsp condensed milk
- 1 tsp lemon juice
Candied Walnuts:In a small saucepan, combine sugar and water. Bring to a boil, then add walnuts. Cook for 2-3 minutes until syrup thickens. Remove walnuts and place them on a parchment-lined tray to cool.Prepare the Shrimp:In a bowl, mix cornstarch, flour, salt, and pepper. Dip each shrimp in the beaten egg, then coat it with flour.Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the shrimp in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.Make the Sauce:In a small bowl, whisk together mayonnaise, honey, condensed milk, and lemon juice until smooth.Assemble:Toss the fried shrimp in the sauce until evenly coated. Transfer to a serving plate and top with candied walnuts. Serve immediately.
