Ingredients
  

  • 4 tbsp all-purpose flour
  • 2 tbsp granulated sugar
  • ¼ tsp baking powder
  • Pinch of salt
  • 3 tbsp milk (dairy or plant-based)
  • 1 tbsp vegetable oil or melted butter
  • ¼ tsp vanilla extract
  • 2 tbsp forest blueberries (fresh or frozen)

Instructions
 

  • In a microwave-safe mug, whisk together the flour, sugar, baking powder, and salt.
    Add the milk, oil (or melted butter), and vanilla extract. Stir until just combined.
    Gently fold in the forest blueberries.
    Microwave on high for 1-2 minutes, or until the cake has risen and is set on top.
    Let cool for 1 minute, then enjoy!

Notes

  • For a gluten-free version, use almond flour or a gluten-free flour blend.
  • For a vegan option, use plant-based milk and a flax egg (1 tbsp ground flaxseed + 3 tbsp water).
