Ingredients
  

  • 1 package (3.4 oz) package of instant pistachio pudding mix
  • 1 cup unsweetened Greek yogurt or low-fat whipped topping
  • 1 cup crushed pineapple (with juice)
  • 2 cups mini marshmallows
  • 1 cup chopped walnuts (optional)

Fruits

  • 1 cup seedless green grapes, halved
  • 1 cup diced fresh pineapple
  • 1 cup diced strawberries

Optional Toppings

  • Shredded coconut
  • Maraschino cherries
  • Extra chopped nuts for garnish

Instructions
 

  • Step 1: Combine the Base
    In a large mixing bowl, combine the pistachio pudding mix and crushed pineapple (with juice). Stir until the pudding mix dissolves and thickens slightly.
  • Step 2: Add Creamy Element
    Fold in the Greek yogurt or whipped topping until the mixture becomes light and fluffy.
  • Step 3: Mix in Fruits and Marshmallows
    Gently fold in the mini marshmallows, green grapes, fresh pineapple, and strawberries. Add walnuts if using.
  • Step 4: Chill and Serve
    Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld together.
  • Step 5: Garnish and Enjoy
    Just before serving, sprinkle shredded coconut, add maraschino cherries, or garnish with extra nuts if desired.

Notes

  • Swap out fruits based on the season—blueberries, mangoes, or even mandarin oranges work beautifully.
  • For a healthier version, use unsweetened coconut and reduce the amount of marshmallows.
