Ingredients
  

For Meatloaves:

  • 1 lb ground turkey (93% lean)
  • 1 egg, beaten
  • ½ cup breadcrumbs (or almond flour for gluten-free)
  • ¼ cup milk (or almond milk)
  • ½ small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

For Glaze:

  • ¼ cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar
  • ½ tsp Dijon mustard

Instructions
 

  • Prep: Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line a baking sheet with parchment.
    Mix Ingredients: In a large bowl, combine all meatloaf ingredients. Mix gently (don't overwork).
    Shape: Divide mixture into 6 portions; shape into oval mini loaves (~3" long). Place on baking sheet or in muffin cups.
    Make Glaze: Whisk glaze ingredients; brush half over meatloaves.
    Bake: 20 minutes. Brush with remaining glaze; bake 5-10 more minutes until internal temp reaches 165°F (74°C).
    Rest: Let cool 5 minutes before serving.

Notes

  • For extra moisture, add ¼ cup grated zucchini or carrot.
  • Freeze unbaked loaves for quick meals later.
  • Double the glaze if preferred.
