Ingredients
  

  • 8 small wheat tortillas
  • 2 cups shredded cheese (Cheddar, Mozzarella, or a mix)
  • 1 cup cooked and shredded chicken (optional)
  • 1/2 cup diced bell peppers
  • 1/2 cup black beans, rinsed and drained (optional)
  • 1/4 cup corn (optional)
  • 1 tablespoon taco seasoning (optional)
  • Cooking oil or butter
  • Sour cream and salsa (for serving)

Instructions
 

  • 1.Prep: Mix cheese with chosen fillings and seasonings.
    2.Assemble: Spread mixture on half of each tortilla, fold over.
    3.Cook:
    Skillet: Cook 2 mins per side over medium heat
    Oven: Bake at 375°F (190°C) for 8 mins
    4.Slice: Cut each quesadilla into 4 wedges.
    5.Serve: With dipping sauces.

Notes

  • Use cookie cutter for fun shapes
  • For crispier texture, brush with oil before cooking
  • Can be made with corn tortillas for gluten-free
