Marry Me Chicken Pasta

Ingredients
  

  • 8 ounces penne pasta
  • 1 pound boneless, skinless chicken breast
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 5 ounces fresh spinach
  • Fresh basil leaves, chopped, for garnish

Instructions
 

  • 1.Cook pasta according to package directions. Reserve 1/2 cup pasta water.
    2.Season chicken with salt and pepper. Heat olive oil in large skillet over medium-high heat. Cook chicken until golden (5-6 min/side). Remove and set aside.
    3.In same skillet, sauté garlic and sun-dried tomatoes for 1 minute.
    4.Add heavy cream, chicken broth, parmesan, Italian seasoning, and red pepper flakes. Simmer 3-4 minutes until slightly thickened.
    5.Return chicken to skillet, add cooked pasta, and toss to combine. Add pasta water as needed to thin sauce.
    6.Garnish with fresh basil before serving.

Notes

  • For lighter version, substitute half-and-half for heavy cream
  • Can use chicken thighs for more flavor
  • Best served immediately as sauce continues to thicken
  • Add spinach or mushrooms for extra vegetables
