- 8 ounces penne pasta
- 1 pound boneless, skinless chicken breast
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, chopped
- 1 teaspoon Italian herbs
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup cream
- 1/2 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 5 ounces fresh spinach
- Fresh basil leaves, chopped, for garnish
1.Cook pasta according to package directions. Reserve 1/2 cup pasta water.2.Season chicken with salt and pepper. Heat olive oil in large skillet over medium-high heat. Cook chicken until golden (5-6 min/side). Remove and set aside.3.In same skillet, sauté garlic and sun-dried tomatoes for 1 minute.4.Add heavy cream, chicken broth, parmesan, Italian seasoning, and red pepper flakes. Simmer 3-4 minutes until slightly thickened.5.Return chicken to skillet, add cooked pasta, and toss to combine. Add pasta water as needed to thin sauce.6.Garnish with fresh basil before serving.
