Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup milk (or plant-based alternative)
  • 1 egg
  • 1 tbsp melted butter
  • ½ cup diced ripe mango (plus extra for topping)
  • 1 tsp vanilla extract (optional)

Instructions
 

  • Mix dry ingredients: Whisk flour, sugar, baking powder, and salt in a bowl.
    Combine wet ingredients: In another bowl, mix milk, egg, melted butter, and vanilla.
    Fold in mango: Gently stir diced mango into the wet mixture.
    Cook pancakes: Heat a non-stick pan, pour ¼ cup batter per pancake, and cook until bubbles form (2-3 mins). Flip and cook another 1-2 mins.
    Serve: Top with extra mango slices, syrup, or whipped cream.

Notes

  • For vegan version, use flax eggs and almond milk.
  • Add a tropical twist with coconut flakes in the batter.
