Ingredients
  

Dough:

  • 1½ cups all-purpose flour
  • 1 tsp salt
  • 2 tsp instant yeast
  • 3 tbsp lukewarm milk
  • ½ cup lukewarm water
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 4 tbsp lard (divided)

Toppings:

  • 2 cups cubed pork (loin or cured ham)
  • 2 tsp cayenne pepper
  • Salt and black pepper to taste
  • 2 eggs

Instructions
 

  • Marinate Pork: Cube pork, season with cayenne, salt, and pepper; refrigerate.
    Prepare Dough: Mix yeast, sugar, flour, and milk; let froth. Add water/oil, knead 10 minutes, and let rise 45 minutes.
    Shape Dough: Divide into 4 ovals (¼-inch thick), spread lard, press meat into center, fold edges.
    Bake: 12–15 minutes at 425°F until meat cooks. Brush crust with whisked egg, pour remaining egg over meat, bake 5–7 more minutes.
    Serve: Cool slightly; pair with pickled peppers or Shopska salad.

Notes

  • ubstitute lard with olive oil for a lighter version.
  • For crispier crust, use a pizza stone preheated to 500°F.
  • Marinate pork overnight for deeper flavor.
