Ingredients
  

  • 1 lb (450g) cooked lobster meat, chopped
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/4 cup celery, finely diced
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste
  • 2 tbsp unsalted butter, melted
  • 4 New England-style hot dog buns
  • Optional: pinch of paprika or Old Bay seasoning

Instructions
 

  • Prepare Dressing: In a bowl, mix mayonnaise, lemon juice, Dijon mustard, celery, chives, salt, and pepper.
    Combine: Gently fold in lobster meat until evenly coated. Chill for 10 minutes.
    Toast Buns: Brush buns with melted butter and toast in a skillet until golden.
    Assemble: Fill each bun generously with lobster mixture. Serve immediately.

Notes

  • For best results, use fresh lobster meat (steamed or boiled).
  • Substitute with high-quality canned lobster in a pinch.
  • Add a lettuce leaf for extra crunch if desired.
