Ingredients
  

  • 4 large russet potatoes
  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped chives
  • 4 tbsp butter
  • Optional: bacon bits, green onions, or jalapeños for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C). Scrub the potatoes, pierce them with a fork, and bake for 45-50 minutes until tender.
    While the potatoes bake, season the steak bites with garlic powder, smoked paprika, salt, and pepper.
    Heat olive oil in a skillet over medium-high heat. Cook the steak bites for 3-4 minutes per side until browned and cooked to your desired doneness. Set aside.
    Once the potatoes are done, slice them open and fluff the insides with a fork. Add 1 tbsp of butter to each potato.
    Top the potatoes with steak bites, shredded cheddar cheese, and return to the oven for 2-3 minutes to melt the cheese.
    Remove from the oven and add sour cream, chives, and any optional garnishes. Serve immediately.

Notes

  • For a crispier potato skin, rub the potatoes with olive oil and salt before baking.
  • Substitute sirloin with ribeye or filet mignon for a more luxurious version.
