- 4 large russet potatoes
- 1 lb sirloin steak, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup chopped chives
- 4 tbsp butter
- Optional: bacon bits, green onions, or jalapeños for garnish
Preheat the oven to 400°F (200°C). Scrub the potatoes, pierce them with a fork, and bake for 45-50 minutes until tender.While the potatoes bake, season the steak bites with garlic powder, smoked paprika, salt, and pepper.Heat olive oil in a skillet over medium-high heat. Cook the steak bites for 3-4 minutes per side until browned and cooked to your desired doneness. Set aside.Once the potatoes are done, slice them open and fluff the insides with a fork. Add 1 tbsp of butter to each potato.Top the potatoes with steak bites, shredded cheddar cheese, and return to the oven for 2-3 minutes to melt the cheese.Remove from the oven and add sour cream, chives, and any optional garnishes. Serve immediately.
