Ingredients
  

  • 1/2 cup (4 oz) vegan/regular butter (soft)
  • 1/3 cup maple syrup or 2/3 cup powdered sugar
  • Zest of 2 limes + 2 tablespoons fresh lime juice
  • 1 teaspoon vanilla extract
  • Slightly less than 1/4 teaspoon salt
  • 2 cups all-purpose flour (for gluten-free: 1 1/2 cups gluten-free flour blend + 1/2 cup superfine almond flour)
  • 1/2–1 cup powdered sugar (optional; omit for naturally sweetened cookies)

Instructions
 

  • 1.Cream Butter & Sugar: Beat butter, sugar, and lime zest until light and fluffy (~3 minutes).
    2.Add Wet Ingredients: Mix in lime juice and vanilla.
    3.Dry Ingredients: Gradually add flour and salt, mixing until just combined.
    4.Shape Dough: Form into two 1.5-inch diameter logs. Roll in sanding sugar if using.
    5.Chill: Wrap in plastic and refrigerate 1 hour (or freeze 30 minutes).
    6.Slice & Bake: Cut into ¼-inch rounds. Bake at 325°F (160°C) for 12-14 minutes until edges are golden.
    7.Cool: Let rest on baking sheet 5 minutes before transferring to wire rack.

  • For stronger lime flavor: Add ½ tsp lime extract
