Ingredients
  

  • 2¼ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 tbsp lemon zest (about 2 lemons)
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Optional Glaze:

  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • ½ tsp lemon zest

Instructions
 

  • 1.Prep: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
    2.Dry Ingredients: Whisk flour, baking powder, and salt in a bowl.
    3.Cream Butter & Sugar: Beat butter and sugar until light and fluffy (~3 minutes).
    4.Wet Ingredients: Add egg, lemon zest, lemon juice, and vanilla; mix well.
    5.Combine: Gradually add dry ingredients to wet, mixing until just combined.
    6.Scoop: Drop 1-tbsp portions of dough 2 inches apart on baking sheets.
    7.Bake: 10-12 minutes until edges are golden. Cool on wire racks.
    8.Glaze (Optional): Whisk glaze ingredients and drizzle over cooled cookies.

Notes

  • For thicker cookies: Chill dough 30 minutes before baking
  • Storage: Keep in airtight container at room temperature
  • Variation: Add 1 tbsp poppy seeds to dough for lemon-poppy version
  • Glaze tip: Apply only to cooled cookies to prevent melting
