  • 2 stalks Celery (Diced) Adds a subtle earthiness and enhances the broth.
  • 1 piece Onion (Chopped) Sauté these until translucent for the best texture.
  • 3 cloves Garlic (Minced) Fresh garlic adds a punch of flavor.
  • Salt and Pepper Essential for seasoning to your taste.
  • Fresh Parsley (for garnish) A pop of color and freshness at the end.

Preparation

  • In a large pot over medium heat, add a drizzle of olive oil. Toss in the chopped onions, diced carrots, and celery. Sauté until the vegetables soften and the onions become translucent—about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Introduce your chicken breasts to the pot and pour in the chicken broth. Bring the mixture to a gentle boil.
  • Reduce the heat to a simmer, cover the pot, and cook for about 15-20 minutes, or until the chicken is cooked through.
  • Once the chicken is done, remove it from the pot and shred it into bite-sized pieces using two forks. Return the shredded chicken to the pot and add the orzo.
  • Let the orzo cook until tender, usually about 8-10 minutes, following package instructions.
  • Once the orzo is cooked, stir in the fresh lemon juice and zest. Season with salt and pepper to taste. Allow it to simmer for a few more minutes to let the flavors meld together beautifully.
  • Before ladling the soup into bowls, sprinkle with fresh parsley for that vibrant touch.

Notes

Let leftovers cool completely before transferring to an airtight container. Store in the fridge for up to 3 days or freeze for 3 months. Prep vegetables in advance to streamline cooking. If too thick, add more broth or water during reheating.
