Ingredients
  

For the Lamb Meatballs:

  • 500 g ground lamb
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • ¼ tsp cinnamon
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)

For the Couscous:

  • 1 cup couscous
  • cup vegetable or chicken broth
  • 1 tbsp olive oil
  • 1 cup fresh herbs (parsley, mint, or cilantro), chopped
  • Salt and pepper to taste

Optional Garnish:

  • Lemon wedges
  • Extra fresh herbs

Instructions
 

  • Prepare the Meatballs:
    In a bowl, combine ground lamb, onion, garlic, cumin, coriander, smoked paprika, cinnamon, parsley, salt, and pepper. Mix well.
    Shape the mixture into small meatballs (about 1-2 inches in diameter).
    Cook the Meatballs:
    Heat olive oil in a large skillet over medium heat.
    Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
    Prepare the Couscous:
    In a saucepan, bring the broth to a boil. Stir in couscous, olive oil, salt, and pepper.
    Remove from heat, cover, and let sit for 5 minutes. Fluff with a fork and stir in fresh herbs.
    Serve:
    Plate the couscous and top with the lamb meatballs. Garnish with lemon wedges and extra herbs if desired.

Notes

  • For a lighter version, use ground turkey or chicken instead of lamb.
  • Add a side of tzatziki or yogurt sauce for extra flavor.
